white bean bisque (full liquid and beyond)

This recipe is good for the puree stage post-op and another version (which adds turkey sausage and parmesan chips) can be found in the recipe section and can follow you throughout maintenance. Make sure you puree it well for this full liquid stage. 

Beans are a good source of protein as well as a healthy carbohydrate that helps keep your blood sugar levels steady—that's important!

White Bean Bisque

1 15oz can white kidney or cannellini beans rinsed and drained

1 cup reduced-sodium chicken broth

2 tablespoons chopped onion

1 tablespoons olive oil

1 garlic clove, minced

1/4 cup evaporated milk

1 teaspoon minced fresh parsley

1/8 salt

1/8 teaspoon dried thyme

Cook onion in oil over medium heat until tender. 

In the same saucepan, add garlic and sauté for 1 minute, stir in beans, broth, milk, parsley, salt, thyme, and a dash of cayenne, (if desired). Bring to a boil. Reduce heat; simmer, uncovered for 12-15 minutes or until heated through. Cool slightly.

Transfer to a blender, cover and process on high until blended. Pour into bowls.
