scallops scampi at roko

There are a lot of things I love about living in Wilmington, NC and most of the have something to do with the ocean and with seafood. 

Dinner out at Roko, a locally owned restaurant in the Mayfair area north of Wilmington, is always a special treat. Although their pasta dishes are amazing, I almost always order seafood and I have never been disappointed. Their entrees are fantastic. But recently I've gotten "hooked" on the Scallops Scampi. The scallops are sweetly caramelized on the outside, but delicate, tender, and silky smooth on the inside. How do they do that? 

The butter is served on the side (for a light and occassional dip) along with risotto which is spilling over with tender asparagus and tiny shreds of carrots, summer squash, and zuchinni—it's simply divine. 

Eating out after bariatric surgery doesn't have to be confusing and difficult, it just takes a little know-how....and now you know how and where to go for delicious (bariatric-friendly) seafood. Yes, we can. We have many more miles to go!
